

Fan Wizard made a paella using roasted blue crabs. Even Ahn Sung-jae praised it.

His opponent was Chef Hou De-zhu with his Fuyong Blue Crab.

The result was a 1:1 tie. Paik Jong-won chose Chef Hou, while Ahn chose Fan Wizard. I thought a 'Gal-cup' (toxic fan war debate) was about to break out...

But a piece of crab shell came out in the Fuyong Blue Crab Ahn was eating. He acknowledged the skill level was incredible, but he voted for the opponent solely because of the shell.

However, Paik Jong-won said a shell also came out in the other dish, and he figured it's unavoidable since it's crab. Since both had shells, he didn't think it was worth debating over.




When judging based purely on taste, the evaluation was an absolute win for the master, saying his skill level was on another dimension. Ahn's review was that it was the taste of a true pro. He didn't try to add anything unnecessary out of anxiety but calculated the aroma and flavor through precise technique.

20 years ago, when Fan Wizard first started in the industry, he worked at Palsun. He was in a position where he couldn't even be seen by Chef Hou De-zhu, who was the executive chef at the time. 20 years later, he challenged him to overcome that wall, but he ended up being eliminated with the words, 'A master is a master; class is permanent.'

For reference, the original 'Fuyong Crab Meat' is made with snow crab or freshwater crab meat. It's not that hard to make, but it's treated as a high-end dish because of the crab. The reason it's considered 'easy' is that besides picking the meat, there's nothing particularly special added, so it's essentially a dish to test your fundamentals.
