This guy is seriously dedicated to plating. His style is super delicate and intricate, like he grinds people up to achieve that level of detail. I wonder how flustered he must have been looking at the visuals of Chef Kim Poong's dishes ใ ใ ใ ใ . And then it's always weirdly delicious when you actually eat them, too, haha.
I just watched Chef Jang Ho-joon's YouTube and brought over something that really showed me this guy is a total legend.

This is a dish with scallops stuffed inside an apple, and the fact that he stuck those little flower-like pieces on the outside one by one is insane.

When you open it up, even inside, the herbs are stuck to the scallops RLY uniformly.

Stuff like this is proofโhis plating truly is art.
