I could choose between black and white and I went with black. We were delayed about an hour in filming, so even though I brought 30L of nitrogen, most of it evaporated, making the time crunch really intense. Since the point was feeling the temperature difference between super cold ice cream and hot apple jam, I turned on the burner to warm the jam, but it reduced way more than expected. Because everything was off balance here, even the jelly felt wrong. For anyone participating in the next season, you should make something that tastes great even when it cools down and isn't sensitive to temperature. If I ever join a cooking contest again, I'm ditching apples. Another dish I really wanted to show was the Coffee Siphon Ochazuke.
