Before the 90s, most Hwagyo (Overseas Chinese) living in Korea were ROC (Taiwanese) nationals. But because of the atmosphere of discrimination... they reportedly had no choice but to go into the Chinese food industry.

The reason he had to go to Japan to learn Cantonese cuisine was that in the 70s, when Master Chef Hou De-zhu was doing his training, Korea and China hadn't even established diplomatic ties yet. Since Master Hou only acquired Korean citizenship in the 2000s, there wasn't much he could do as a Taiwanese national back then. Since people from the Guangdong region were doing Chinese food in Japan, he had to go there to learn.

Master Chef Hou's success back then was reportedly a huge inspiration for the Hwagyo community. I assume Hwagyo discrimination... doesn't really exist anymore, right? Source: Baek Jong-won's Alley Restaurant Gallery [View Original]
